πŸͺ Gluten Free Eggless Matcha Cookies (low sugar)

Ingredients

Main

  • 1g baking soda
  • pinch salt
  • 13g Matcha powder
  • 115g Unsalted butter
  • 125 Rice flour (or all purpose flour)
  • 80g coconut sugar
  • 5ml of madagascar vanilla

Egg replacement option 1

  • 2 tablespoons water
  • 2 teaspoons baking powder
  • 1 teaspoon vegetable oil

Egg replacement option 2

  • 2 tablespoons maple syrup (don't heat)

If you don't have any egg allergies, use these same ingredients, but use 1 egg instead of the egg replacements.

Instructions

  1. melt butter
  2. mix sugar, butter, egg (or replacement), and vanilla in one bowl
  3. sift flour
  4. sift matcha
  5. mix flour, matcha, baking soda, and salt
  6. mix all ingredients with a spoon
  7. chill for 1-2 hours
  8. heat oven to 160 degrees
  9. cut into 2.54cm pieces
  10. roll into ball
  11. cook for 8-10 minutes
